Italian Pizza: Fun Facts You Never Knew #PizzaWorld

From Europe to Asia, South America to Antarctica, there's always an establishment that serves the world's number one food: pizza. As much as you eat this, do you really know the food's history or the fun facts attached to its creation? Chances are, you don't know much. You simply enjoy every bite, but there's something about knowing about the food you eat that makes you appreciate it even more. Well, here are some fun facts you'd never expect:

Strange Pizza Toppings

Indians include paneer (a type of cottage cheese) while the French have their own flambé pizza to boot. Japan, on the other hand, make things as interesting as their menu by including eels, mayonnaise, or squid on their list of toppings. You can definitely expect something different in every country you visit, and if your adventurous enough, many of them, as you'll find, are a delight to your palate. So, don't hesitate because you could come up with your own delicious recipe and have your friends appreciate what you've created. Surprisingly, however, not too many people appreciate anchovies. In a survey done, people would rather try other flavors rather than have this fish on their pizza.

Growing Trend

More and more Americans are starting to appreciate the taste of cold pizza. Whether this stems from sheer laziness or from being adventurous, there are people out there who eat the slice straight out of the fridge. As for restaurants, 17 percent of these establishments are actually pizzerias. Each one offers something unique. This actually gives people a chance to explore and see which pizza they love most. In fact, the average person consumes around 46 slices of pizza per year. Sadly, many people blame this for the problems related to obesity, when in fact, you can still create your very own healthy pizza recipe. It's all about choosing the right kinds of toppings.

Pizza History

The first known pizza actually came from ancient Greece where they covered their pita bread with olive oil and a variety of herbs. It was only in the later part in history that the pizza we know today reached the city of Naples in Italy. This became the Italian meal because very first pizzeria opened in Naples in 1738.

Pizza Day

Everyone loves their pizza, and in honor of this world's favorite food, the US government declared October as the national pizza month in 1987. Surprisingly, however, the highest consumption of pizza isn't on this month or during special holidays. Pizza establishments go haywire with the amount of orders during Super Bowl Week (which happens in the earlier part of the year).

Famous Orders

Men love the meat-lovers pizza while most women opt for the vegetarian variety. And of all the Americans that order pizza, 72 percent of them prefer to gobble down their meal with Coke.




Italian Pizza


Ingredients

2 tablespoons olive oil
8 ounces hot Italian sausage, casings removed
1 teaspoon minced garlic
2 (12-ounce) bunches fresh spinach, stemmed, coarsely chopped (about 12 cups), or 1 (10-ounce) package frozen cut-leaf spinach, thawed and drained
1 (15-ounce) container whole milk ricotta
12 ounces mozzarella cheese, shredded
1/3 cup plus 2 tablespoons freshly grated Parmesan
4 ounces thinly sliced prosciutto, coarsely chopped
4 large egg yolks, beaten to blend
Pastry Dough, recipe follows
1 large egg, beaten to blend

Procedures:

1.) Position the rack on the bottom of the oven, and preheat the oven to 375 degrees F.

2.) Heat 1 tablespoon of oil in a heavy large frying pan over medium heat. Add the sausages and saute until golden brown, breaking the sausage into pieces, about 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Transfer the mixture to a small bowl and set aside to cool.

3.) Meanwhile, heat 1 tablespoon of oil in the same frying pan over medium heat. Add the spinach and cook until the spinach wilts and the juices evaporate, stirring often, about 10 minutes. Cool to room temperature. Squeeze the spinach to drain as much liquid as possible.

4.) Into a large bowl, add egg yolks and beat lightly. Stir in the ricotta, mozzarella, and 1/3 cup of Parmesan cheese. Add the sausage, the spinach and prosciutto to the mixture and stir to combine.

5.) Roll out larger piece of dough on a lightly floured work surface to a 17-inch round. Transfer the dough to a 9-inch springform pan. Trim the dough overhang to 1 inch. Spoon the ricotta mixture into the dough-lined pan. Roll out the remaining piece of dough into a 12-inch round. Place the dough over the filling. Pinch the edges of the doughs together to seal, then crimp the dough edges decoratively. Brush the beaten 1 large egg over the entire pastry top. Sprinkle the remaining 2 tablespoons Parmesan over the top. Bake on the bottom shelf until the crust is golden brown, about 1 hour.

6.) Let stand 15 minutes. Release the pan sides and transfer the pizza to a platter. Cut into wedges and serve. 6 to 8 servings


Pastry Dough:

3 1/2 cups all-purpose flour
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
1/4 cup cold solid vegetable shortening, cut into pieces
1 teaspoon salt
3 large eggs, beaten to blend
2 to 4 tablespoons ice water

Blend the flour, the butter, the shortening and salt in a food processor until the mixture resembles coarse meal. Blend in the eggs. With the machine running, add the water 1 tablespoon at a time until the dough forms. Gather the dough into a ball. Divide the dough into 2 pieces, with 1 piece twice as large as the second piece. Flatten the dough pieces into disks. Wrap in plastic wrap and refrigerate until the dough is firm enough to roll out, about 30 minutes.

Yield: 2 dough pieces (enough for 1 Pizza Rustica)

Focaccia Crust Pizza #PizzaWorld

Has pizza night ever moved from a bunch of boxes in the family room to the kitchen— with yeasty focaccia dough, and some prepared toppings do the talking? Some of you may find this surprising, making pizza with focaccia bread.

Focaccia Bread Ingredients:

2 ¾ cups all purpose flour
1 tablespoon rapid-rising yeast
1 tablespoons sugar
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon granulated garlic
2 tablespoon olive oil
¾ cup warm water

Procedures:

1. Mix dry ingredients (flour, yeast, sugar, salt, oregano and garlic) in a large bowl.

2. Combine olive oil and water. Make a well in the center of the dry ingredients and pour the water in. Gradually stir in the flour mixture until it is fully incorporated.

3. Turn the dough out onto a floured surface and knead until smooth and elastic. The dough should spring back after poked.

4. Place the dough into an oiled bowl, cover with a towel and place in a warm place for about 45 minutes, or until doubled in size.

5. Mold the dough according to the size you want, the top with your favorite toppings.

6. Bake in a preheated oven until cooked.

It’s important to have a variety of toppings, because you want everyone to be able to make their dream pizza—the more toppings the better.

Toppings: Diced zucchini tossed with olive oil and salt, halved grape tomatoes tossed with garlic, olive oil and salt, pizza sauce, ricotta cheese mixed with parmesan cheese, cheddar cheese and a pinch of nutmeg, diced onions, mushrooms (portabella and button), turkey blue cheese, arugula and artichoke pesto, fresh herbs (thyme and basil), prosciutto, turkey Italian sausage, turkey pepperoni, mozzarella, truffle oil or it depends on your taste.


Italian Macaroni and Cheese Pizza #PizzaWorld

A popular macaroni and cheese molded into a delicious pizza. Easy to prepare and with a creamy taste you can enjoy with your family.


Ingredients:

• 7 oz. (196g.) Italian sausage, removed from casings
• 6 oz. (170g.) macaroni and cheese mix
• 1 small onion, diced
• 1/2 cup mozzarella cheese, shredded
• 1 egg
• 4 oz. (112g.) tomato sauce

Procedures:

• Follow package directions to cook macaroni and cheese. Add the egg to the macaroni and cheese mixture. Mix everything together.

• Cook onion and sausage in a skillet over medium heat until the meat is not pink. Drain the mixture.

• Heat the oven to 375°F (190°C).

• Spread the macaroni in a pizza pan that has been greased. Bake the dish in an oven for 10 minutes. Spread the tomato sauce on top of the macaroni, and layer the sausage and mozzarella cheese on top. Bake for another 10 minutes.

• Toppings: any toppings of your choice; minced beef, pepperoni, pineapple chunks, bacon, ham, chicken or any combination. You can use pizza dough too. Serves: 3-4 servings

Pizza Fernando #PizzaWorld

A new way of cooking pizza like Italian authentic margherita. Ready in 1 hour and 30 minutes. Makes 2 pizzas.

For the Pizza Dough:

350g strong white flour
25g coarse semolina , plus extra for sprinkling
1½ tsp salt
7g pkt fast-action dried yeast
1 tbsp olive oil , (not extra virgin) plus extra for drizzling
275ml tepid water

For the Topping:

400g can plum tomatoes
2 plump garlic cloves , finely chopped
2 tbsp tomato purée
2 balls buffalo mozzarella , (about 140g each)
two small handfuls basil leaves, roughly torn parmesan shavings and rocket, to serve

Procedures:

1) In a bowl, mix flour, semolina, salt and yeast. Make a dip in the middle, pour in oil, water, then stir and squeeze everything together (hands are easiest for this). The dough should feel very sticky. When it is well mixed, cover and leave for 15 mins.

2) Tip the dough on to a lightly oiled work surface and rub your hands and the inside of the bowl with oil. Knead the dough about 12 times only, giving it a quarter turn each time you knead. Tuck the ends under so it is the shape of a ball and lay it in the bowl, seam side down. Cover and leave for 10 mins.

3) Repeat the kneading and leaving for 10 mins again, then knead and leave for 15 mins, oiling the surface and your hands each time.

4) In between kneadings make the sauce for the topping. Drain the tomatoes and tip them into a bowl. Snip them into small pieces with scissors (pic 2). Stir in garlic, tomato purée, and seasoning. Set aside. Brush a baking sheet with oil and sprinkle with a little semolina. Heat oven to 240C/fan 220C/gas 9.

5) When the dough is ready, cut in half and put one half onto a lightly fl oured surface. Knead 4-5 times to squash out any air bubbles, then roll it out. At the point where it just keeps springing back, brush off the fl our from the work surface and rub on a little oil. This makes it easier to roll. Continue to roll out until you have a 28cm circle, pulling it into shape as well. Lift it onto the baking sheet (it's easier if you drape it over a rolling pin).

6) Drain the mozzarella, then pat dry with kitchen paper. Brush the dough with olive oil, then spread half the sauce over, almost up to the edge. Scatter over half the basil, then tear up one mozzarella ball and scatter over the basil. Grate over pepper and drizzle with a little oil.

7) Bake for 12-15 mins, until the topping is bubbling and the dough is going brown. Repeat with the remaining dough and toppings. To serve, scatter with parmesan shavings, rocket leaves and drizzle with oil.

Ingredients:

Serves: 2

For the Crust:

• 1 (1/4 ounce) package dry yeast
• 1/4 cup water (105 to 110 degrees)
• 1 teaspoon sugar
• 2 3/4 cups flour (all purpose)
• 1 teaspoon salt
• 1 cup water
• cornmeal
• 4 teaspoons olive oil

Toppings:

• 1 cup pizza sauce
• 8 ounces mozzarella cheese, shredded & cold
• oregano
• garlic powder

Your choice of or combination of:

• pepperoni
• onion
• green pepper
• mushroom
• olive
• sausage
• hamburger

Directions:

Prep Time: 1 1/4 hr Total Time: 1 3/4 hrs

1. Combine yeast with sugar and warm water; let set about 10 minutes or till foamy.

2. Using food processor and steel blade, place flour and salt in the bowl. Add yeast mixture through the top and pulse on high 3-4 times.

3. With machine running, add oil and remaining 1 cup of water.

4. Process till a ball forms and continue processing for 30 seconds more.

5. Have an additional 1/4 cup of flour ready to add in case machine starts to labor.

6. Flour hands and remove dough from bowl.

7. Oil a large mixing bowl.

8. Place dough in bowl and turn to oil all surfaces.

9. Cover with plastic wrap and a towel.

10. Place in a warm draft-free place.

11. Let rise till doubled, about 45 minutes.

12. Punch down dough and divide (recipe makes 2 pizzas).

13. Sprinkle corn meal on a 12-inch pizza pan.

14. Stretch or roll dough on a floured board to fit pan and form a 1/2-inch rim.

15. Cover and let rise 20 minutes.

16. Preheat oven to 425°.

17. For Topping: Spread a thin layer of pizza sauce over dough; sprinkle with 1/2 of the cheese and seasonings.

18. Top with preferred toppings.

19. Bake 15 to 20 minutes or until crust is browned and cheese is melted.

Make your own pizza dough and pizza sauce to suits your tastes.



Yield: Makes 2 pizzas (14 in.); 8 to 12 servings

Ingredients:

• Make your own pizza dough

• 1 1/2 cups pizza sauce

• 4 cups shredded 100% whole-milk mozzarella cheese (1 lb.)

• 4 ounces meat such as thinly sliced salami or pepperoni

• 3 to 4 cups thinly sliced vegetables such as red onions, mushrooms, bell peppers, or pitted ripe olives

• 2 to 4 tablespoons seasonings such as chopped fresh jalapeño chilies or minced garlic (optional)

Preparation:

1. Let pizza dough stand at room temperature until almost doubled and no longer cold, 30 minutes to 1 hour. Coat two 14-inch pizza screens or pizza pans with cooking oil spray.

2. Remove dough from bags; coat with flour. On a lightly floured board, roll each ball into a 10-inch round.

3. Shake excess flour from dough, toss each round until it is stretched to 14 inches. Or lay each on a floured board and gently stretch to 14 inches. Lay crusts on prepared pizza screens or pans; don't press dough down.

4. Spread 3/4 cup quick pizza sauce over each crust to within 1 inch of edge. Let stand, uncovered, at room temperature up to 3 hours. Shortly before baking, distribute half the cheese, meat, vegetables, and seasonings over each crust.

5. Set screens or pans on the bottom rack or on a heated baking stone (see notes) on bottom rack in a 500° oven (one at a time if you have only one oven). Bake until crust is browned on the bottom (lift one edge to check), 10 to 15 minutes. Slide each pizza onto a board and cut into wedges.

Some Favorite Toppings:

Hot Spicy Chicken:

Top each round with 3/4 cup quick pizza sauce; 1 1/2 cups shredded sautéed chicken breast mixed with 3 to 4 tablespoons hot sauce; 2 cups shredded 100% whole-milk mozzarella cheese; 3/4 cup thinly sliced red onion; 2 to 4 tablespoons thinly sliced fresh jalapeño chilies; 1 to 2 tablespoons minced garlic; 4 ounces uncooked firm chorizo, cut into 1/2-inch chunks; and paprika to taste.

Margherita:

Brush each round with 1 tablespoon extra-virgin olive oil; top with 2 cups shredded 100% whole-milk mozzarella cheese and 1 1/2 teaspoons dried basil. Bake until top is lightly browned, about 10 minutes. Distribute about 18 fresh basil leaves mixed with 1 teaspoon olive oil over pizza; continue baking until crust is browned on the bottom, about 4 minutes longer. Meanwhile, drain 8 thin tomato slices on paper towels; arrange on baked pizza.

Vegetable:

Top each round with 1 cup quick pizza sauce; 2 cups shredded 100% whole-milk mozzarella cheese; 1/2 cup each thinly sliced red onion, green bell pepper, zucchini, and drained oil-packed dried tomato halves; and 1 jar (6 1/2 oz.) marinated artichoke hearts, drained.

Ingredients:

1/2 cup finely chopped celery
1/3 cup chopped pimento−stuffed green olives
1/4 cup chopped pepperoncini
1/4 cup chopped cocktail onions
1 clove garlic, minced
3 Tbsp. extra virgin olive oil
2 tsp. dry Italian salad dressing mix

3 oz. thin−sliced deli ham/salami, diced
8 oz. shredded provolone cheese
2 12" uncooked dough crusts
extra virgin olive oil

Procedures:

1. Mix first 7 ingredients for marinated olive salad and chill overnight.

2. Combine olive salad, ham, and cheese.

3. Top one dough crust with 1/2 of mixture. Drizzle with oil.

4. Bake in preheated 500° F oven for 8−10 minutes or until crust is golden brown and cheese is melted.

5. Remove from oven and cool on a wire rack for 2−3 minutes before cutting into wedges and serving.

6. Repeat with other dough crust.
