2 tablespoons extra-virgin olive oil
8 ounces freshly grated whole milk mozzarella
8 ounces freshly grated white cheddar
2 ounces Parmigiano-Reggiano

Procedures:

1. Combine flour, yeast, and salt in a large bowl and whisk until homogenous. Add oil and water and stir with wooden spoon until combined. Cover with plastic wrap and let rise at room temperature at least 8 hours and up to 24.

2. The next day, turn dough out onto lightly floured surface and dived in half. Form balls with each half, then place into lightly oiled bowls, coating all surfaces of the balls with oil. Cover with plastic wrap and set aside at room temperature.

3. Meanwhile, make the sauce. Heat olive oil in a medium saucepan over medium-high heat until shimmering. Add garlic, oregano, and pepper flakes and cook for thirty seconds until fragrant. Add tomato paste and cook, stirring constantly for 1 minute. Add two thirds of crushed tomatoes and stir to combine. Reduce heat to lowest setting and cook, stirring occasionally for 1 hour. Stir in remaining tomato sauce and season to taste with salt. Remove from heat and set aside.

4. Stretch the dough: Coat two 10-inch cast iron skillet (or cake pans/oven-safe nonstick pans) with 1 tablespoon each of shortening and olive oil. Transfer dough balls one at a time to a large cookie sheet and stretch out into a 10-inch circle. Transfer the circle to the greased skillet. Cover and allow to rise for 1 hour at room temperature. Meanwhile, adjust the oven rack to the bottom position and preheat oven to 500°F. Combine the cheeses in a large bowl and cover until ready to use.

5. When dough has risen, top each circle with 1 cup of sauce (you will have leftover sauce), spreading it to within half an inch of the edge. Divide grated cheese evenly between the two pies, spreading it all the way to the edge of each pie.

6. Bake pies until top is bubbly and golden brown in spots and cheese has charred around edges, 15 to 20 minutes. Remove pizzas from oven and using a thin metal spatula, release the edges from the pans. Carefully lift pies to check for doneness underneath. If you'd like a darker bottom crust, set each pie directly over a medium-low flame and cook, turning occasionally until desired level of doneness is reached.

3) Place bread onto baking tray. Spread with tomato paste. Sprinkle with half the feta. Spoon over mince. Sprinkle with remaining feta. Bake for 15 minutes or until warmed through. Top with tomato and parsley.

1/2 cup parmesan cheese
4 tbsp tomato puree
1/2 tsp freshly ground black pepper
2 cloves garlic, minced
salt
olive oil
freshly ground black pepper

Procedures:

1. Mix yeast and 1 tsp sugar on warm water, set aside until very bubbly.

2. Now combine the rest of the ingredients for the crust but using only 1 1/2 cup of flour with the yeast mixture. Mix with a spatula until it forms a batter.

3. Now slowly add the remaining flour and start kneading in a floured surface (don’t knead the dough too much that the texture is tough)

4. Now place it in a big greased bowl and cover it with a cling wrap, make sure it will handle twice the size of the dough. Place in a warm location (I usually place it in an oven preheated to 60C then turned off) for around 45 minutes or until it doubled the size.

5. Once doubled, remove from container, deflate and continue to knead, flatten using a rolling-pin make sure the thickness is no greater than 5mm, place it in a well-greased pan, brush with oil and dust with corn meal.

6. Mix the tomato puree with minced garlic, salt and black pepper. Set aside

7. Place your toppings brushing the dough with olive oil initially, then with the tomato puree mix, mozzarella cheese, Romano cheese then parmesan cheese on top. Let it rest for 15 minutes.

8. Place in a preheated over at 230C for 20 to 25 minutes.

• Preheat oven to 425 degrees Fahrenheit (220 degrees Centigrade)

• In a medium bowl combine the cubed cooked chicken, melted butter, Jalapeno Pepper and hot chili sauce. Mix well and cool.

• Roll out dough on a lightly floured surface. Spray a large pizza pan with non-stick cooking spray.

Italian Pizza Crust

Ingredients:

• 2 cup warm water (110 degrees Fahrenheit/45 degrees Centigrade)
• 6 tablespoons Active Dry Yeast
• 3 teaspoon Salt
• 5 tablespoons Sugar
• 2 teaspoons Dried basil
• 2 teaspoons Dried Oregano
• 2 teaspoons Garlic Powder
• 2 cups Cheddar Cheese
• 6 tablespoons Olive Oil or Corn Oil, or Vegetable Oil
• 5 cups Flour, all purpose flour

Procedures:

• Combine water, yeast, salt, sugar, olive oil in a bowl. Leave until bubbly & foaming.

• Add garlic powder in flour and mix in yeast mixture.

• Add grated cheese, dried basil and dried oregano while mixing the dough.

• Mix for about 15 to 30 minutes. Let the dough rest for 10 to 30 minutes. The longer it rests, the thicker and more tasty the crust.

• 2 to 4 tablespoons seasonings such as chopped fresh jalapeño chilies or minced garlic (optional)

Preparation:

1. Let pizza dough stand at room temperature until almost doubled and no longer cold, 30 minutes to 1 hour. Coat two 14-inch pizza screens or pizza pans with cooking oil spray.

2. Remove dough from bags; coat with flour. On a lightly floured board, roll each ball into a 10-inch round.

3. Shake excess flour from dough, toss each round until it is stretched to 14 inches. Or lay each on a floured board and gently stretch to 14 inches. Lay crusts on prepared pizza screens or pans; don't press dough down.

4. Spread 3/4 cup quick pizza sauce over each crust to within 1 inch of edge. Let stand, uncovered, at room temperature up to 3 hours. Shortly before baking, distribute half the cheese, meat, vegetables, and seasonings over each crust.

5. Set screens or pans on the bottom rack or on a heated baking stone (see notes) on bottom rack in a 500° oven (one at a time if you have only one oven). Bake until crust is browned on the bottom (lift one edge to check), 10 to 15 minutes. Slide each pizza onto a board and cut into wedges.
